Selecting an espresso machine is a crucial factor that impacts both the quality of your coffee and your shop's image. You should choose a machine that aligns with your shop's style and operational scale. For instance, if you anticipate selling 50 cups a day at a price point of 35–50 Baht per cup, investing in a machine costing 200,000–300,000 Baht might not be cost-effective. Conversely, if your shop expects to sell 100 cups or more daily—or commands a higher price point (e.g., 80 Baht+)—you should opt for a machine with 2–3 group heads and a large boiler capacity to ensure continuous brewing and the ability to meet customer demand promptly.

5 Key Factors of a Good Espresso Machine
    1. Heating System: Look for Heat Exchange or Multi-Boiler systems. These are superior to Single Boiler systems for high-volume, continuous brewing.
    2. Boiler Size: Standard espresso machines store hot water in a boiler for use; whenever hot water is drawn, fresh water enters to replace it. Consequently, a                  larger boiler minimizes temperature fluctuations and allows the machine to stabilize its temperature more quickly during continuous operation.
    3. Water Pump System: The machine should provide sufficient pressure and maintain consistent, stable pressure throughout the brewing process. The rotary                system provides more consistent and continuous pressure compared to the reciprocating (vibration) pump system.
    4. Portafilter size: The standard diameter for the coffee filter basket is 58 mm. A smaller size reduces the contact area between the water from the brew head              and the coffee grounds, which affects the flavor.
    5. Spare parts and maintenance: The chosen coffee machine should have readily available spare parts and consumables—such as O-rings or group head seals to          support maintenance after components wear out, ensuring easy replacement in the event of damage.
